Energy Efficiency

At 800 kWh/m¹, the catering industry is one of the most energy consuming commercial activities throughout Europe. It makes energy performance the most important aspect of the “High Performance Kitchen” concept.

Indoor Environment Quality (IEQ)

Turnover of staff is one of the major challenges faced by commercial catering establishments. The low appeal of the chef’s profession is largely due to unpleasant thermal comfort. This is related to air temperature and speed, the heat radiated by cooking appliances and humidity.
